Kale Soup Use a stock pot (10 to 12 cups) Saute 1 medium diced yellow onion in olive oil Add Two diced medium red potatoes Add 5 diced garlic cloves Add 2 cans chicken broth Add 2 Johnsonville Beef Brats (See note below) cut lengthwise twice then diced to about 3/8 inch squares Add Coarsly chopped about 20 kale leaves (discard stems) Simmer at a low boil about 20 minutes
Serves 4 polite eaters (2 really hungry eaters)
Note 1: Use 1 potato per beef brat Note 2: We found Kilbasa and Hillshire Farms sausages unsatisfactory. Prefer Johnsonville or Aidell. Note 3: Add a peeled and diced Kohlrabi for a little extra flavor
